Do we really want to have this setting's Donnie-analogue also be a minotaur? Suggest making him part-cephalopod (octopus or squid), with multiple tentacles in place of his arms. Such a TF would actually be helpful for a bartender, as well as going a long way towards making it impossible to confuse Gordy with Donnie.
Also: There's really no reason Gordy needs to be mute or taciturn, either. Why not just let him retain his normal voice, and normal level of talkativeness? But if you really do want Gordy to prefer silence, don't go the "too basso" route, since that's pretty much expected of big, bulky, minotaurish types; rather, have TFOR 'bestow' on him the 'gift' of a high-pitched, squeaky tenor.
